Add some sweet potatoes and you have a perfectly balanced dish, high in vitamins like potassium, Vitamins B-6, vitamin C, fiber and magnesium. This recipe can be prepared in minutes and makes a prefect warm side to your salad or sandwich.
Green Beans with Sweet Potatoes

- 2 cups green beans, cut in 2 inch pieces
- 2 cups sweet potatoes, boiled and cubed
- 2 tbs organic sunflower oil
- 1 tsp coriander powder
- 1 tsp turmeric
- 1/2 tsp red chili flakes
- Salt to taste
- 1 tsp fresh squeezed lemon juice
Instructions
Heat oil in a heavy bottom pan.
Add coriander powder and turmeric, stir to roast for 20 seconds.
Add string beans, sauté for 3 minutes on medium heat.
Add sweet potatoes and stir well to incorporate all the spices and oil, cook for another minute.
Add chili flakes and salt.
Turn off the heat, transfer the string beans to a serving bowl and sprinkle with fresh lemon juice!
